Beekeeping is another of the activities of Poggio Sorbello. Twenty hives are bred in the woods from which, during the summer, excellent wildflower honey is "harvested". Between spring and summer you can also observe the splendid blooms of phacelia and clover meadows, specially cultivated by the farm to ensure nourishment for bees.

Honey semifreddo

Ingredients (6 people):

  • 3 egg whites
  • 400 ml of liquid cream
  • 6 tablespoons of Poggio Sorbello wildflower honey
  • 1 handful of American peanuts
  • 10 gr of butter
  • 50 gr of dark chocolate
  • 2 tablespoons of milk

Toast the American peanuts in a pan with the butter for a few minutes, then place the mixture on paper towels and oarsely chop it.
Whip cream and egg whites separately then add, when they are almost ready, 3 tablespoons of honey to the cream and 3 to the egg whites.
Add the egg whites to the cream and finally add the peanuts. Place the mixture into a plumcake mold and leave to rest in the freezer for at least 6 hours.
Melt the chocolate with the milk in bain-marie. Pour the hot chocolate on the slices of semifreddo and serve.

American peanuts can be replaced with pine nuts, crunchy grains, or other dried fruit as you like.
