Basic recipe

ingredients for 4 people: 250 gr. husked millet, extra virgin olive oil, salt, 500 ml of water.
Rinse well the millet with cold water, drain it thoroughly and place it in a pot with a tablespoon of oil. In the meanwhile, bring the water to a boil. When water boils, pour it into the pot where the millet was toasted and bring everything to a boil over  high flame. Once the boil has been reached lower the flame, add salt, cover the pot and let simmer.
After at least 20 minutes switch off the flame and allow the millet to cool down for a few minutes.
After cooking, the millet can be used for many delicious recipes: meatballs, couscous, pies, cakes or in the oven with vegetables.
