Zuppa Antica

Soak the content in cold water for 1 hour. Drain and wash it, then place it in a pot with plenty of water. Add carrot, onion, celery and parsley and simmer over a low flame for about 1 hour, until all the ingredients are tender. Serve the soup with its own water, extra virgin olive oil, salt, pepper and Parmesan cheese. You can prepare excellent soups.
